Tips to cook the perfect Christmas turkey.


Free range Turkeys cook quicker because of the fat content that is not present in a standard intensively reared turkey. So please ensure you use a meat thermometer when cooking to avoid over cooking. Remove the meat from the oven as soon as the needle hits 65°C. Leave to stand for at least 30 mins, personally I leave mine covered with foil & towel for around 1 hour to rest the bird. Trust me it works and you will amaze your family & guests with the perfect Christmas dinner.

60°C - It's Pink
65°C - It's Perfect
70°C - It's Overcooked


Gas oven - pre heat to 180oC
Fan oven - pre heat to 160oC
